Screening sushi passion: the filmmaker’s and the chef’s

David Gelb is director of “Jiro Dreams of Sushi,’’ a documentary about legendary sushi chef Jiro Ono. In his 80s, Ono is proprietor of Sukiyabashi Jiro, a 10-seat restaurant in a Tokyo subway station. It has received three Michelin stars. But even after decades of work, Ono says he hasn’t achieved perfection. Gelb spoke with the Globe about getting to know the master, the meaning of craft and family, and what goes into a truly great piece of sushi.
