A big roast bird gives you several meals for the rest of the weekend, some that simply shift the same ingredients on the Thanksgiving table into another dish, some that use similar foods in a new way. Shepherd’s pie with turkey instead of lamb is a popular family dinner, and you can take many of the components right off the Thanksgiving table. A serving of baked stuffed potatoes uses up the last few spuds in that giant bag you decided you needed, and will please your resident vegetarians, as will chestnut and wild rice bake, topped with panko and Parmesan. If any of these recipes contains an ingredient you don’t have, just use what’s around. The next day, everything tastes good.
