SANTA FE, N.M. – It seems almost inevitable that Tabla de Los Santos restaurant in the Hotel St. Francis would be run by chef Estevan Garcia. Like the rest of the property, the “table of the saints” has an austere Spanish Colonial decor that suggests a monastery -- and Garcia is a former Franciscan friar.
