Savenor’s Market, the upscale butcher shop in Cambridge, recently added a takeout counter with made-to-order sandwiches using high-quality meats cured and roasted in house. Just about everything that goes in the sandwich is also homemade, and breads are from Iggy’s. Store chef Mark Gaudet named these uncommon creations after locations to hint what’s inside. Try a Toulouse (France, $9.99), slices of succulent duck confit made from cured mallard legs, slow roasted, then seared, layered with pickled root vegetable slaw and spicy aioli, all enclosed in a torta roll and warmed. The Ariccia (Italy, $8.99) is a version of a porchetta sandwich in which thick slices of marinated pork shoulder, roasted in cured pork belly, are topped with shaved pickled fennel and a drizzle of honey, then stuffed inside a farmhouse roll. The Havana (Cuba, $10.99) combines French bread, spicy aioli, roast pork shoulder, Rovagnati Gran Biscotto (fine ham), Swiss cheese, and pickled red onion, warmed till the bread is toasty and the cheese melts.
