It's common for restaurant employees to have pre-work briefings on what they should know for an upcoming shift or work week - new menu items, and the like. But Eastern Standard takes it to another level. Owner Garrett Harker has always had a theory that smart staff equals happy staff. And happy staff equals impressed customers. To put the theory to practice Harker has instituted a unique policy of book reports, pop quizzes and field trips.
