Spanish tapas caught on quickly when they came to this country. Perhaps it was all that aromatic olive oil, or familiar ingredients like eggs and potatoes cooked into a tortilla. Spaniards love smoked paprika, sausages, beautiful hams, melty cheeses, and all kinds of fish. Here are shrimp with a traditional romesco sauce — something like mayonnaise, only made with bread and almonds; potato salad with tuna, egg, peas, and pickles; and a popular dish of chickpeas with spinach and eggs, all classic tapas.
