The recipes aren't intimidating--they are detailed, and therefore long. She teaches you how to do each step and so there are a lot of explanations for each step. I found the two volumes of French Cooking great tools to learn how to cook when I was first married and had never been in a kitchen. I don't cook that way as much anymore, but I still use her sofflee recipe and
souffle recipe and love it.
