Plymouth Artisan Cheese has been made on and off (mostly on) in Plymouth Notch, Vt., since 1890. It was founded by Calvin Coolidge’s father and other local farmers. Today, the cheese is made by Jesse Werner, who was raised in Vermont, went to Brandeis, and came to cheesemaking with an MBA. He makes a historically accurate cheddar-like cheese, which is sold as it once was, in a wax coating.
