Recipe for roast pork loin

Serves 8

A roast pork loin like this would have been a typical meal for the staff of grand estates like the one portrayed on “Downton Abbey.” Cooking time can vary widely depending on the thickness of the roast; begin checking the internal temperature with a meat thermometer after 50 minutes.

2cloves garlic, finely chopped
1tablespoons chopped fresh marjoram
Salt and pepper, to taste
2teaspoons chopped
fresh sage
2tablespoons vegetable oil
1boneless pork loin (about 4 pounds)

1. Set the oven at 350 degrees. Have on hand a roasting pan.

2. In a bowl, combine the garlic, marjoram, salt, pepper, sage, and vegetable oil. Rub the mixture all over the meat. Set it in the pan.

3. Roast the pork for 60 minutes or until a meat thermo­meter registers 150 degrees. Let the meat sit in a warm place for 10 minutes before slicing. Adapted from
