It is called “wrinkled butternut,” which is a less-than-appetizing name. Butternut Rugosa ($1.49 a pound), has the same flesh-colored skin as regular butternut (it’s grooved rather than smooth and somewhat wrinkled), with an intense orange flesh that has a meaty, creamy, earthy quality. Slice it into thick bands, sprinkle with olive oil, and roast in a hot oven until it is tender. Eat skin and all. An ideal way to feed your resolution to dine well this year.
