It is called “wrinkled butternut,” which is a less-than-appetizing name. Butternut Rugosa ($1.49 a pound), has the same flesh-colored skin as regular butternut (it’s grooved rather than smooth and somewhat wrinkled), with an intense orange flesh that has a meaty, creamy, earthy quality. Slice it into thick bands, sprinkle with olive oil, and roast in a hot oven until it is tender. Eat skin and all. An ideal way to feed your resolution to dine well this year. Available at Wilson Farm, 10 Pleasant St., Lexington, 781-862-3900. SHERYL JULIAN
