Serves 4 with leftovers
| 1 | cup mayonnaise |
| Juice of 1½ lemons | |
| 1½ | teaspoons smoked Spanish paprika, or more to taste |
| 1 | bunch scallions, finely chopped |
| Salt and pepper, to taste |
1. In a bowl whisk together the mayonnaise, lemon juice, smoked paprika, scallions, salt, and pepper. Taste for seasoning and add more salt, pepper, or paprika, if you like.
