Serves 4 with leftovers
|Juice of 1½ lemons|
|1½||teaspoons smoked Spanish paprika, or more to taste|
|1||bunch scallions, finely chopped|
|Salt and pepper, to taste|
1. In a bowl whisk together the mayonnaise, lemon juice, smoked paprika, scallions, salt, and pepper. Taste for seasoning and add more salt, pepper, or paprika, if you like.
2. Set aside ¼ cup of the mayonnaise for the hash. Serve the remaining with the stuffed potatoes. Sydney Oland
