Recipe for old-fashioned chicken soup

Serves 6

The secret to my chicken soup — add a drum roll here — is chicken, and plenty of it. Add some of it to the bowls or turn it into another dish. Chicken sandwiches, with thick slices of the meat, mayo, and lettuce, on a soft roll, would be one dish. Chicken quesadillas, with black beans, jalapenos, and avocado, is another.

The photograph accompanying this article doesn't show any chicken in it!  And the carrots do not look like vegetables that have been cooking for over an hour with the chicken.  The recipe does not say whether to remove the chicken skin before cooking or whether to save and refrigerate the vegetables that were cooked with the chicken.  And what is the purpose of steeping the chicken pieces first before they are simmered into stock?

Hopefully, you will respond to the previous post.  I had similiar questions especially, "Why was the chicken soaked in hot water?and "What about chicken skin removal?"
