This is a delicious combination. It is a great dish for diabetics. I'm a Type 2 diabetic and make this quite often. It cuts back on the carbs but gives the almost full flavor of mashed potatoes. I use the ratio of 1 1/4 pounds of potatoes to 1 pound of cauliflower. Weigh them while at the supemarket. I also mash in roasted garlic, 2 cloves or blue cheese to taste. Guests love it when I serve it or bring it to pot luck, at their request.
