How to choose eggs


Unless otherwise noted, eggs are from factory farms, where chickens are confined for most of the day and generally given commercial feed. Many cooks use these eggs for baked goods. If you’re dyeing lots of eggs, buy the white ones.

For eggs with a better flavor, a richer yolk, and creamier texture, look for cartons labeled “cage-free eggs,” “pastured eggs,” or “free-range eggs.” This should mean that the chickens are roaming around and fed well. In New England during the winter, chickens might not be pastured.

The truest way to tell if you’re getting an egg nourished by a hen that scratched around all day is to buy it from a responsible shop or find the website of the grower and read it. Many farmers are willing to say how their chickens are raised. S.J.
