Recipe for ricotta dip

Ricotta dip

Makes 1 cup

Wherever you buy cannoli chips, you’ll probably find a ricotta dip. Or make your own by whisking sugar and vanilla into ricotta. This is a slightly more sophisticated version of a traditional cannoli filling. If you prefer a sweeter dip, add 1 tablespoon confectioners’ sugar.

1 cup whole-milk ricotta

3 tablespoons candied orange or citron peel, finely chopped

2 tablespoons orange liqueur or 1/2 teaspoon vanilla extract

1. In a food processor, beat the ricotta until smooth.

2. Transfer to a bowl. Stir in the candied peel and liqueur or vanilla. Cover and refrigerate for several hours for the flavors to mellow. Jeri Quinzio
