Recipe for smothered pork with onions and peppers

Serves 4 with leftovers

6 boneless pork shoulder steaks (6 ounces each)
Salt and black pepper, to taste
4 tablespoons canola oil
2 onions, thinly sliced
4 mixed red and green bell peppers, cored and thinly sliced
3 cloves garlic, finely chopped
2 tablespoons flour
1 cup chicken stock
¼ cup apple cider vinegar
2 sprigs fresh oregano
