Pam and Keith Pollack ran Savory Pie Co. in Brooklyn for 30 years and sold pizzas to specialty shops nearby. The couple devised many recipes for crusts and turned one they make with cornmeal and wheat bran into rustic crackers. The result is Z Crackers ($5 to $6 for an 8-ounce package), which are made in seven flavors, including sea salt and olive oil, red onion and rosemary, and garlic and basil. The sturdy, crunchy crackers are cut into irregular shapes with pizza cutters and baked in small batches. Use them for hearty cheeses and spreads. They’re some of Z best around.
