Recipe for blueberry-orange yogurt parfaits

Serves 4

Slimming, refreshing, and just enough sweetness from the fruit to satisfy, these instant parfaits are layered with blueberries in orange juice and vanilla yogurt.

1pint fresh blueberries, picked over
Grated rind and juice of 1 navel orange
2cups low-fat vanilla yogurt
Few sprigs fresh mint, leaves removed

1. In a bowl, toss the blueberries and the orange rind and juice; set aside for 10 minutes.

2. In 4 coupe or other glasses, add a few spoonfuls of the yogurt to the bottom of each. Divide the berries among them, saving a couple berries to garnish each glass. Add a few sprigs of mint to each. Add the remaining yogurt to the glasses, and garnish with the remaining berries and remaining mint. Cover with plastic wrap and refrigerate for up to 1 hour.
