Recipe for strawberry-basil wine pops

Catherine Smart

Serves 8

These are the adult version of fruit pops, made with moscato d’Asti wine, which is sweet enough so you need no additional sugar. It’s also very low in alcohol. Instead of pureeing the fruit, pulse the berries in a food processor so there are pieces, which makes a prettier bar, and add chopped fresh basil. You need Popsicle molds to make them.

cups moscato d’Asti
8ounces strawberries, halved (about 1½ cups)
2tablespoons chopped fresh basil
Pinch of salt

1. In a food processor, combine the wine, berries, basil, and salt. Pulse about 8 times until the berries are chopped into small pieces.

2. Spoon the mixture into 8 Popsicle molds (or fewer molds, if yours are large). Use the handle of a spoon to evenly distribute the fruit throughout the pop.

3. Freeze at least 6 hours or overnight. Carefully run the molds under warm water to loosen pops before removing. Catherine Smart
