Recipe for sweet potato steak fries

Few can resist the allure of a crispy sweet potato. Fortunately for moms, they make the list of super foods with loads of vitamin A (read: good for you). This four-ingredient recipe — two of which are salt and pepper — requires minimal prep time and a hot oven. Serve plain or with a selection of dipping sauces like ranch, honey mustard, or ketchup, beside a rotisserie chicken or grilled meat.

3large sweet potatoes, cut into long, thick wedges (about 6 pieces per sweet potato)
3tablespoons olive oil
Salt and pepper, to taste

1. Set the oven at 425 degrees. Have on hand 2 rimmed baking sheets.

2. In a large bowl, toss sweet potatoes with olive oil, salt, and pepper.

3. Spread fries out on the baking sheets, one cut side flat to the sheet; do not overlap.

4. Bake for 20 minutes. With a thin metal spatula, flip the fries. Bake for 10 minutes more or until fries are crispy on the outside and tender inside. Total baking time is 30 minutes. Karoline Boehm Goodnick
