    Recipe for apple crostata with cheddar-rosemary streusel

    Makes one 9-inch tart

    ¼cup brown sugar
    ¼cup flour
    2tablespoons cold butter, cut up
    cup grated Cheddar
    1teaspoon chopped fresh rosemary
    1recipe apple crostata (see recipe, at left)

    1. In a bowl, mix together the brown sugar and flour. With your fingertips, work in
    butter until it forms small crumbs.

    2. Stir in Cheddar and rosemary.

    3. Make the apple crostata recipe, reducing the granulated sugar in the filling to 2 tablespoons. Transfer the apple filling to the rolled-out pastry.

    4. Top with streusel.
