Mast Brothers add cookbook to creations

Iowa transplants Rick Mast and Michael Mast of Brooklyn, N.Y., make chocolates that have a cult following. The pair, writes celebrity chef Thomas Keller in the introduction to their new “Mast Brothers Chocolate: A Family Cookbook,” “helped us appreciate the range of flavors possible in a single bar of chocolate.” The book offers an appealing array of confections for chocolate lovers: pudding, pops, marble cake, Boston cream pie, chocolate gingersnaps, ricotta pancakes. The brothers also add chocolate where you least expect it — to a pork loin with cranberries, pureed beet cake, butternut soup, balsamic vinaigrette, salmon fillets, pork sausage, and coq au vin.
