To make a quick, superb Irish soda bread, mix 2 cups flour, 3 tablespoons sugar, 1/2 teaspoon baking soda, and 1/2 teaspoon salt. Stir in 3/4 cup buttermilk, 1 egg, 2 tablespoons melted butter, and 1 cups golden raisin. Add more buttermilk if needed. Shape on a floured counter into a round, cut a shallow “X” on top, and bake on parchment-lined sheet for 45 minutes or until it sounds hollow on bottom when tapped.
