Makes 1 cocktail
1¾ ounces Eight Bells rum
1 ounce Clement Creole Shrubb
1 ounce pineapple juice
Squeeze of lemon juice
Soda water, to taste
1 pineapple chunk (for garnish)
1. In a shaker over ice, combine the rum, shrubb, and pineapple and lemon juice. Shake.
2. Pour into a rocks glass filled with ice, and top with soda water. Garnish with pineapple.
