1½ | pounds fingerling potatoes, halved lengthwise |
2 | tablespoons olive oil |
Salt and pepper, to taste |
1. On a rimmed baking sheet, toss the potatoes with oil, salt, and pepper.
2. About 30 minutes before the roast is done, place the potatoes in the oven. Cook for 25 minutes, or until they are tender, brown, and crispy.
