Marshmallows topped with chocolate hearts

Long-stemmed roses are fine for Valentine’s Day, but even more enticing are these dark chocolate hearts atop pillowy marshmallows sweetened with organic wildflower honey. Husband and wife Russ and Shari Apotheker — who produce a line of small-batch, honey-sweetened chocolate bars for their company, Apotheker’s, in Dorchester — are crafting a limited run of the decadent treat. The chocolatiers use grass-fed gelatin and marshmallow root to make the plush, airy mallows, which come infused with either vanilla or elderflower ($8 for 10). They top each square with a dark-chocolate heart made from organic cacao. It’s a luscious marriage of texture and flavor.
