People have been consuming sorghum in various forms for centuries, but it is now earning more attention. When Robert Poirier learned that the nutritious grain could be popped like corn, he became interested in its attributes. “The texture is almost the same as popcorn, but it’s smaller and more dense and more satisfying,” he says. “And it has no hull, so it doesn’t get caught in your teeth.” Last year he cofounded the Norwood company POP I.Q., and produces a line of flavored, organic, air-popped sorghum ($1.49 to $1.99 for 1 ounce). The mini kernels come enlivened with cheddar cheese from a 100-year-old dairy in Idaho; paprika gives them some kick. Another choice is kettle-style, sweetened with brown sugar. Italian spices and olive oil flavor a variety Poirier named Tuscany.
