Combine all ingredients in a pint glass; stir for 30 seconds with a bar spoon. Strain into a martini glass, garnish with a maraschino cherry. To create pineapple syrup, bring 4 oz. of water to a boil, add 2 bar spoons of pineapple chunks and 4 oz. of sugar. Remove from stove once sugar dissolves and cool. Place the syrup in an air-tight container for 48 hours. Strain the pineapple.
