Choosing dates for recipes

Regardless of which type of date you buy -- Medjool or Deglet Noor -- select plump, shiny ones without crystallized sugar on the exterior.

WHILE FARMERS’ MARKETS in Southern California offer numerous varieties of dates, here in the Northeast we see mainly two types, Medjool and Deglet Noor. Medjools are particularly fudgy, with soft, chewy flesh that can hint of caramel and berries. Deglet Noors tend to be firmer and to taste more floral and honey-like. Regardless of which type you buy, select plump, shiny dates without crystallized sugar on the exterior.
