Strawberry goat cheese cheesecake at Bistro 5

Bistro 5 chef Vittorio Ettore uses goat cheese in desserts all summer, and for June is making goat cheese cheesecake: a simple mix of goat cheese and lemon with a crust of crushed amaretti cookies. It comes with fresh strawberries, strawberry coulis, and strawberry sorbet. Strawberry “confetti” — small pieces of dehydrated fruit — is scattered over the dish for crunch.
