The Great Escape, an Italian-American hideaway located in Salem’s former jail, does all that it can to play up the motif. It’s a bit cheesy, but that’s the point. We started with three appetizers, which were pretty much perfect. One was involtini di prosciutto and asparagus, the crunchy stalks of the vegetable wrapped in enough meat to satisfy someone who prefers the ham to the green. — Meredith Goldstein
