At Veggie Galaxy in Central Square, try the Cambridge Street, with chipotle black beans, roasted red pepper puree, cheese, and more.

The diner experience is quintessential Americana, scented by bacon and fried eggs. Unless that diner is Veggie Galaxy in Central Square. There, eggs and cheese can be replaced by vegan substitutes, and breakfast “meat” is seitan chorizo or tempeh bacon. The menu offers omelets such as the Cambridge Street (with chipotle black beans, roasted red pepper puree, cheese, corn, and shallot and apple salsa), or you can build your own.  — Devra First
