A Restaurant’s Take

Salmon and tuna crudo at Stella

In the South End, an instant classic.

Wendy Maeda/Globe staff/file

Evan Deluty says that crudo misto — diced and dressed raw salmon and tuna — has been his South End restaurant Stella’s most popular dish ever since opening day almost nine years ago. The locally sourced fish, hand-cut to order, is served with a vinaigrette made from house-made limoncello, shallots, and thyme. — Rachel Travers
