At Cafe Barada in North Cambridge, Claude Salameh, who learned to cook from her mother, does wonders with ordinary ingredients. A chicken shish kebab plate is almost too generous, giant bites of meat on a mound of rice with hunks of zucchini, onion, and tomato.
