Makes about 1½ cups

½ large English cucumber, peeled, and coarsely chopped
¾ cup granulated sugar
2 teaspoons kosher salt
¾ cup rice wine vinegar

1. In a bowl with a spoon, mash the cucumber, sugar, and salt to pulverize it evenly. Cover and set aside in a cool, dark place for 1 hour.

2. Transfer the mixture to a blender. Add the vinegar and blend well. Strain through a fine sieve, cover, and refrigerate. Adapted from Russell House Tavern
