Alex Bourgeois, creator of Alex’s Ugly Sauce, experimented long and hard to find the perfect pepper combination. The resulting blend comprises habanero, cayenne, and serrano peppers, and delivers what he calls “whole-mouth heat,” starting with a bright jolt at the tip of your tongue, which works its way to a richer burn at the back. The taste is as interesting as the kick. Says the small-batch producer, “beets and honey give a fullness of flavor you don’t get from other hot sauces.” He uses the word “ugly” in the name because when he was developing the sauce, a co-worker remarked that it just was not good-looking. Bourgeois sources peppers from Stillman’s Farm in Central Massachusetts and works out of Crop Circle Kitchen in Jamaica Plain. In August, Bourgeois will offer a milder variety and a habanero blend. Or, try the limited-edition Dragon sauce, made with habanero and Thai dragon peppers. That’s a burn worthy of fire fanatics everywhere.
