Connecticut mom Kathie Pelliccio got the idea to roast and season shelled pumpkin seeds as a healthy snack for her five kids. That was nine years ago. She started selling the treats at local fairs and farmers’ markets. Now Pelliccio’s crunchy savory and sweet seeds are roasted professionally and sold nationwide. Toss some in a salad or yogurt and sneak a handful for yourself. They are delicious and nutritious.
