    Recipe for Parsley-apple salad

    Serves 8

    1large bunch Italian parsley, leaves removed from stems
    5tart apples, cored,
    seeded, and diced
    2tablespoons apple cider vinegar
    Salt, to taste
    ¼cup olive oil

    1. In a large mixing bowl, combine the parsley and apple; toss well.

    2. In another bowl, whisk together the vinegar, salt, and olive oil. Add to apple mixture and toss well. Taste for seasoning and add more salt, if you like. Transfer to a serving bowl. Luke Pyenson
