    Serves 4

    1/4 cup sugar

    1/4 cup water

    8 ounces gin


    6 tablespoons lemon juice

    1 large bottle soda water

    1. In a saucepan over low heat, combine the sugar and water. Cook, shaking the pan occasionally, until the sugar dissolves. Turn the heat to medium and let the mixture simmer for 10 minutes to make a simple syrup. Leave to cool, then refrigerate until cold.

    2. In 4 tall glasses filled with ice, divide the gin, lemon juice, and syrup. Stir well. Top with soda water.
