An easier way to roll pastry

Rolling out dough, one of the most important steps in making pastry, is a hundred times easier with Joseph Joseph’s roll-up pastry mat ($18). The silicone mat lies flat on the counter without curling and will not slip. Markings along the
bottom are handy for rolling rectangles while the circles on top, numbered from 5 to 12 inches, are helpful for making pie crusts and scones. The pastry lifts off easily so you can transfer it to a pie pan or baking sheet. When you’re finished, wipe off the mat, roll it up. and fasten it with the
