Since opening The Gelato Fiasco in Brunswick, Maine, in 2007, Bentley University grads Joshua Davis and Bruno Tropeano have created 1,500 flavors in small batches. Now they package 24 — “the flavors that constantly sell out, that people tell their friends about,” Davis says — for sale out of state. The top three sellers in Massachusetts are dark-chocolate caramel sea salt (pictured), caramel sea salt, and torched marshmallow s’more. In June they’ll add five new flavors, including maple sap tap and big county brownie. Available at Bee’s Knees Supply Co., 12 Farnsworth St., Boston; Pemberton Farms, 2225 Massachusetts Ave., Harvest Co-op, 580 Massachusetts Ave., Cambridge; Concord Provisions, 73 Thoreau St., Concord; Dave’s Fresh Pasta, 81 Holland St., Somerville; Pamplemousse, 26 Haven St., Reading; and Marty’s Fine Wines, 675 Washington St., Newton, or go to www.gelatofiasco.com.
