Recipe for delicata fries

Serves 8

4medium delicata squash, halved, seeded,
and quartered
3tablespoons olive oil
Salt and pepper, to taste
2tablespoons chopped fresh parsley

1. Set the oven at 450 degrees. Have on hand a rimmed baking sheet.

2. Cut each of the delicata quarters into ¼-inch sticks. In a bowl, toss them with the olive oil, adding it 1 tablespoon at a time, salt, and pepper.

3. Tip the fries onto the baking sheet and with your hands, set them all skin sides down. It’s OK if they are very close on the sheet.

4. Bake for 35 minutes, turning the sheet from back to front halfway through cooking, or until the edges are starting to char. If the fries on the edges of the sheet start to brown, move them to the center. Sprinkle with parsley. Sheryl Julian
