|Salt and pepper, to taste|

1. Set the oven at 450 degrees. Have on hand a rimmed baking sheet.
2. Cut each of the delicata quarters into ¼-inch sticks. In a bowl, toss them with the olive oil, adding it 1 tablespoon at a time, salt, and pepper.
3. Tip the fries onto the baking sheet and with your hands, set them all skin sides down. It’s OK if they are very close on the sheet.
