Swordfish tacos and an Austrian pour with a pedigree

Last year, when Greg Jordan became the sole owner of The Quarry Restaurant in Hingham, the executive chef made a few changes, adding shareable plates to the menu and updating the wine list. A 2015 Weingut Markus Huber “Terrassen” Grüner Veltliner ($9 a glass, $36 a bottle) is one of the splendid selections. The Austrian pour, crafted at a family winery with more than 250 years of history, offers white pepper and aromatic herbs on the nose, plus subtle fruit on the palate. It’s excellent with miso-glazed swordfish tacos. The grilled white fish is tucked into tortillas with “mild, not fiery” bok choy kimchi, then garnished with sweet potato shoestring fries. “The flavor profile of the wine lines up nicely with the sweetness of the miso and the spiciness of the kimchi,” says Jordan. These days, the chef-owner feels a special sense of pride looking out onto a patio of happy customers. “We’ve become more of a spot to pop into,” he says. “It’s really what I’ve always wanted.”
