    Recipe: Baked marinated tofu

    Makes enough for 4 bowls

    3tablespoons low-sodium soy sauce
    3tablespoons lime juice
    2tablespoons Thai sweet red chile sauce
    1tablespoon olive oil
    teaspoons brown sugar
    3scallions, finely chopped
    1block (14 ounces) extra-firm tofu, cut into 1-inch cubes and patted dry

    1. Set the oven at 475 degrees. Lightly oil a 9-by-13-inch baking pan.

    2. In a bowl, mix the soy sauce, lime juice, chili sauce, oil, and brown sugar. Stir in scallions and tofu. Marinate for 30 minutes.

    3. Transfer to the baking dish in one layer and bake for 30 minutes, or until golden brown. Sally Pasley Vargas
