    Recipe: Potato chip tortilla will put protein in your kids’ bodies, and they’ll love it

    Serves 2 to 4

    Cape Cod chips, which are a little thicker than most, work well, though any brand will do. If you want to further channel Spain, plus expand your kid’s palate, sprinkle in some slivered Serrano ham.

    2cups potato chips, lightly crushed
    4eggs
    1tablespoon olive oil

    Whisk eggs in a bowl, then stir in the potato chips. Let sit for five minutes. Slick a small hot nonstick skillet with the oil, then pour in the egg mixture. After about two minutes, turn onto a plate, then slide the uncooked side facedown into the skillet and cook for another minute, or until cooked through. Slide the tortilla onto a plate, cut into pieces and serve. Ted Weesner
