
Runamok Maple sells organic Vermont syrups infused with spices, fruits, and flowers and smoked or barrel aged in high-shouldered, glass bottles. Some are flavored with cardamom and elderberry; others smoked in pecan wood or aged in rum and bourbon barrels. The company was founded by husband-and-wife team Eric and Laura Sorkin. Their crew taps 81,000 trees in Northern Vermont to produce the syrups. They recently added a new choice — maple syrup infused with jasmine tea ($17 for 8.45 ounces). Delicate and floral, the fragrant syrup tastes of jasmine flowers and sweet honeysuckle. The blend of flavors adds an appealing sweetness to a glaze or vinaigrette.
