Trois Petits Cochons (which translates to “Three Little Pigs”) opened in 1975 and has gone from small Greenwich Village charcuterie to a leading company for handcrafted smoked meats, pâtés, terrines, sausages, and other French specialties. The brand has hatched a new idea — a line of Sous-Vide Egg Bites. (Sous vide means “under vacuum” in French and gives food a water bath while sealed in an airtight bag). They’re inspired by the quiches the original shop sold. The one-inch high rounds, made with natural ingredients and cage-free eggs, are tender and velvety inside, mimicking quiche, and well seasoned. (About $2 each). The minis, really more than a bite, are available in four choices — Bacon & Swiss, Spinach & Feta, Prosciutto & Gruyère, and Ham & Espelette Pepper. Warm them in the microwave, toaster oven, or a skillet. They’re tasty at room temperature as well and make a flavorful, handy, and healthy breakfast or snack at 100 to 180 calories.
