Cheesy garlic bread in East Boston

At Dough in Maverick Square, this dish is worth the wait.

When ordering roasted garlic bread at Dough, a laid-back pizza and sandwich shop in Maverick Square, don’t be surprised if it arrives after the entrees. Cooking it is a long process that begins with sauteing garlic and caramelizing onions in a cast-iron pot. The slow-heated mix, along with Romano and Parmesan cheeses, is spread on French loaves and toasted before a layer of whole-milk mozzarella is added and it all goes back into the pizza oven. The chewy, flaky final product is garnished with shaved Romano cheese and served with sweet homemade marinara for dipping. Rest assured: It’s worth the wait.
