At Ashmont Grill in Dorchester, pastry chef Clare Garland starts with sweet, ripe fruit from a variety of local orchards to make peach and raspberry crumble. The peaches are peeled, and the berries give the dessert a pinky glow. Her rich topping uses flour, brown sugar, and toasted almond paste, and the dish is, of course, served with vanilla-bean ice cream. — Rachel Travers
