“The thing about chowder is, it’s chunks of potatoes and cream, and everything else is up to your imagination,” says Marjorie Druker, whose New England Soup Factory serves different chowders year-round. “We make sweet potato-corn, vegetable chowder, corn with caramelized onions, corn with toasted red pepper puree.” One special, cheddar corn chowder with bacon, amps up the formula with cheese for a super-rich bowl.
